On the fourth day of Christmas, you will find, Mediteranean Spice Rub by Josh and Sue's Gourmet Creations. Josh and Sue's products have been on our shelves from the early days... probably close to five years now. Their relish is a staple in our home and we've definitely been inspired to get a little more creative in the kitchen thanks to some of the products in their range.
A word from Sue:
Established in 2013, our family business was created after I left corporate life to spend more time with Josh and to follow my passion for great food, cooking and entertaining.
Josh's gluten intolerance led to the creation of Josh&Sue, an artisan product range that was free from gluten, preservatives and additives.
When our recipes were perfected and the last jar sealed shut, Josh and I loaded up our car and spent every weekend selling our wares at local markets.
Fast forward a few years and Josh&Sue is now producing more than thirty-five, award-winning relishes, chutneys, jams, marmalades, salts, dukkah and more!

You can never have too many sides over the holidays, and this crispy potato bake is packed full of flavour. Easy to prepare in advance, this one is sure to wow your guests.
Crispy Mediteranean Potato Bake
1 hour 20 minutes
8-10 medium potatoes
1 cup chicken stock
2 tbspn olive oil
2 tbspn butter
2 tbspn Josh & Sue Mediterranean rub
Preheat oven to 180° C. Grease a large baking dish. Peel the potatoes. Slice very thinly. Keeping each potato together, fan them out in groups in the dish. Carefully pour half the stock over the potatoes. Drizzle with oil. Place knobs of butter in random spots on top of the potatoes. Sprinkle the Mediterranean rub over the top. Bake for 30 minutes. Top up with some remaining stock. You may not need to use it all. Bake for a further 20-30 minutes until the potatoes are tender, but very crispy on top. Sprinkle with goat's cheese and chopped parsley.
