Mount Zero Quince Paste
During Autumn, Mount Zero harvest quinces from their farm at Quantong in the Wimmera in Victoria. This harvest is for a single annual batch prepared by Jane and Neil, the owners of the Mount Zero brand and recipients of the ‘Melbourne Food and Wine Legends’ accolade at the 2010 Melbourne Food and Wine Festival. Quince fruit is high in pectin, making it perfect for turning into jams, jellies and pastes. It’s sweet notes make it a great partner for a range of cheeses that have distinctive woody or sharp flavours, adding something to the palette without overshadowing any of their narrative. It is a diverse condiment that goes well with a soft cheese, like a Brie or even a vintage cheddar.
